PUMPKIN BREAKFAST COOKIES

The mornings at my house are always kind of crazy and I am sure all you moms out there can relate to me. Once I return from the gym I have exactly one hour to get 2 kids up, dressed, fed , packed, and on the bus to school! Now many of you know my youngest is special needs and therefore my one hour is pretty much devoted to doing treatments doing a tube feed and buckling him in his wheelchair before the bus comes, at the same time getting my 9 year old packed up and fed and ready to start her day of school and dance. Breakfast for my daughter and I sometimes becomes an afterthought so I wanted to share with you a quick and easy fall recipe we love!! ANYTHING PUMPKIN I LOVE!!
PUMPKIN BREAKFAST COOKIES
½ cup almond butter
½ cup pureed pumpkin
¼ cup of raw honey
1 egg
½ tsp vanilla
½ tsp of baking soda GF
2 tsp pumpkin pie spice
½ cup of ground chia seeds
½ cup of ground flaxseed
You can add shredded coconut, any nuts and hempseed if you choose
*Preheat the oven to 350. Combine all ingredients in a large bowl. Roll out with palm and press cookies onto a baking sheet and bake for 12-15 minutes. Hope you find these as delicious as we do!!
