- 1 Tbsp coconut oil
- 1-2 Tbsp Truvia
- 2 tsp cinnamon
- For the Waffles mix
- 2 Omega Organic Eggs
- 1 Tbsp Coconut Oil
- 1 cup unsweetened vanilla almond/coconut milk blend
- 1 Tbsp organic honey
- 1/2 cup unsweetened applesauce
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 Tbsp baking powder

STEPS for Apples
Sauté your apples, then heat a large skillet to medium heat. Once hot add oil, then apples and stir. After a few minutes add in truvia and cinnamon. Cover to let steam and soften, stirring frequently. Once softened (about 4-5 minutes) remove lid to let caramelize a bit more. Remove from heat.
STEPS for Waffles
1 Next, prepare your waffles. Start by preparing eggs by mixing in large bowl.
2 Add honey, applesauce, oil, truvia and whisk. Add almond/coconut milk and stir once again.
3 Add flour, baking powder, salt and cinnamon to a sifter and sift over wet ingredients. Stir to combine, dump in oats and about half your apples. Let batter rest for 5 minutes before while preheating waffle iron.
4 Spray the waffle iron with non-stick cooking spray and spoon about 1/2 cup of the batter onto the center of the iron.
5 Once done, remove and place on your plate and if you can wait a second before going crazy on them let them cool for a minute or two, otherwise eat at your own risk instantly!
Enjoy – until next time eat well, train hard and be nice to people!
