Kelly’s Anaheim Roasted Sweet Potatoes

I wanted to share one of my favorite sweet potatoes recipes with you all.  I am always looking for a side dish to go along with my protein.  When I am looking for something that feels a little bit heavier I turn to sweet potatoes.  Sweet potatoes are healthy in so many ways, they are great for you digestive tract, helps regulate blood sugar levels, are high in antioxidants and the list goes on and on.. So when you want something a bit heartier to go along with your meat try this.

¼ cup coconut oil

½ teaspoon sea salt

1 teaspoon cinnamon

1 teaspoon black pepper

4 cups peeled and diced sweet potatoes

1 Anaheim Pepper, seeds removed and diced

1 tsp. of minced garlic

Preheat oven to 400, melt the coconut oil in a bowl with spices and whisk together.  In another bowl add the sweet potatoes, Anaheim pepper and minced garlic. Pour the spice mixture over the potatoes and mix well.  Roast for 25-30 minutes.  ENJOY!!! J
