Spaghetti Squash Taco Casserole
Tacos are amazing…… but sometimes they can crush your macros and fat loss goals.
So, we put together this quick amaizng taco style spaghetti squash dish for you guys to enjoy. It’s low carb high in protein and pack with flavor.
The best part is you ONLY NEED a few ingredients, you can add a few extras in if you like but you can have an amazing meal with just a few items.
Here is what you need:
2lbs of ground turkey 93/7
2 packs of taco seasoning of choice (we used Frontera Skillet Sauce)
1 can of organic black beans
1 large spaghetti squash
1 cup low-skim shredded cheese (mozzarella or mexian blend works)
1 cup diced sweet cherry tomatoes
1 cup of corn
Additional Add On For Topping :
Onions – Yellow
Cilantro
Avocado
Yogurt Ranch
How it goes down:
Heat oven to 350 degrees
Cut squash in half and clean out seeds
Season with salt/pepper as desired – add small amount of coconut oil
Place cut squash face down on cooking sheet, back for 45 minutes or until soft
Clean out the squash guts into a bowl
Cook ground turkey in skillet -adding in sauce when cooked
Add in black beans, corn, diced tomato, avocado, cilantro, and onion to turkey mix
Throw squash guts into cooking dish as the base
Pour entire turkey mix onto the squash guys now in cooking dish
Top with cheese/cilantro and cover with foil
Bake for 30 minutes at 350 degrees
Remove from oven take off foil and checking dish
Cook for an additional 10-15 minutes as needed
Remove let sit for 10 minutes cut and serve
(I liked the yogurt ranch on the side, but can also be topped as served)
