Sweet Potato Protein Muffins.….
What You Need……
6 Egg Whites
1/2 cup of pumpkin puree
1//2 cup gluten free oats
3 large sweet potatoes
1 scoop of vanilla PROLAB whey isolate (optional)
1 Tsp. baking powder
Stevia – to taste around 6-8 packets for me personally
Cinnamon -to taste – the more the better if you ask me
What you do next……
Get the oven ready around 350 degrees
Mix all ingredients in a ninja, vita-mix, any high power blender
Spoon mix into muffin tins – oiled and lined with paper
(make sure to oil them even in the paper they tend to stick)
Bake for between 28-40 minutes – check them around 25 minutes and see how they are coming along when baked ours just over 40 minutes and they turned out pretty legit.
