Pizza Spaghetti Squash Bake
Prep Time – 20 Minutes
Cook Time – 1 Hour
Total Time – 1 Hour & 20 Minutes
Ingredients:
- 1 large spaghetti squash or 2 small ones
- Olive Oil to taste
- 1 pound Italian sausage (or lean ground beef or turkey)
- 1 cup organic pasta sauce
- Sea salt & black pepper to taste
- 2 tablespoons of garlic powder
- 3/4 onion sliced (yellow onion)
- 1 bag of Mozzarella or Italian Cheese Blend
- Fresh basil and or dried Italian Herbs for added flavor
- Pepperoni
Instructions:1. Preheat oven to 375 degrees.2. Cut spaghetti squash in half lengthwise. Clean out the seeds and guts to make hollow. Drizzle lightly with olive oil, sprinkle salt, pepper. 3. Place spaghetti squash open side down on a cooking sheet and bake for 35 minutes or until done. 4. Once squash is done baking start shredding the noodles using a fork to separate and place in a bowl5. Over medium heat on the stovetop drizzle olive oil on pan, add onions and sausage – cook until brown6. Then pour pasta sauce, garlic, salt and pepper to the browned meat and let cook on low heat7. Place the spaghetti squash noodles into casserole dish evenly then pour pasta sauce sausage mixture over noodles
8. For topping spread even layer of Italian cheeses (we used mozzarella)9. Put in oven and bake for 1 hour or until the top of the mixture has a light crust forming. 10. Sprinkle chopped basil or Italian herbs over cheese
11. Place pepperoni evenly on top
12. Place pizza bake in oven uncovered and bake at 375 degrees for about 25 mins.
